Fried Bakes and Saltfish

Canned tuna is a leaner option while canned mackerel is often less expensive.

Whole wheat flour adds fiber, while self-rising flour can simplify the recipe.
Add unsalted butter to all-purpose flour and work it in by hand.
Mix all ingredients together until well combined.
Knead the dough until smooth, then cover and let it sit for 20 to 30 minutes.
Boil the saltfish for about 15 minutes.
Run cool water over the boiled saltfish and break it apart to wash away excess salt.
Squeeze lime juice over the saltfish to cut the rankness and combat the salt.
Squeeze the saltfish dry and place it in a bowl.
Fry onions, garlic, and bell peppers for 2 to 3 minutes.
Add garlic powder, onion powder, black pepper, and complete seasoning to the aromatics and toss to combine.
Add the saltfish and fry for about 2 minutes, then turn off the heat.
Add a little oil to the countertop and place the dough on it.
Roll out the dough and cut it into circles using a biscuit cutter or any round object.
Cover the dough with a damp paper towel to prevent it from drying out.
Preheat oil for frying and add four bakes at a time.
Scoop hot oil over the bakes to help inflate them while frying.
Fry until golden brown on one side, then flip and brown the other side.
Continue frying until all dough is cooked and serve.
