Gradually add 350 ml of Brandy to the mixture while continuing to whisk.

Prepare a double boiler or a makeshift bain-marie by placing a bowl over a saucepan of simmering water.

Transfer the egg mixture into the bowl on the bain-marie.

Whisk the mixture gently while it heats, ensuring it does not boil, to avoid scrambling the eggs.

Continue whisking until the mixture thickens into a custard-like consistency.
