Chicken thighs are more economical and lower in fat.
Add chicken thighs to the pan and season with salt and black pepper.
Brown both sides of the chicken thighs in the pan.
Remove the chicken and let it rest.
Add butter to the pan, then add chopped shallots and garlic; sauté for a few minutes.
Add dry Riesling to the pan, turn up the heat, and scrape the bottom to deglaze.
Add chicken stock to the pan and return the rested chicken to it.
Bring the mixture to a simmer and let it simmer for about 20 to 30 minutes.
Sauté chopped mushrooms in a separate pan until lightly golden.
Add the sautéed mushrooms to the chicken mixture and stir.
Turn off the heat and add an egg yolk, heavy cream, and all-purpose flour to the chicken mixture.
Dust the mixture with salt, white pepper, parsley, and nutmeg; stir to combine.
Present the final dish.
