Greek yogurt reduces calories while maintaining creaminess

Chop 2 small onions.

Quarter a mix of mushrooms and chop some into a fine duxelle.

Cut smoked tofu into small cubes.

Fry the chopped onions until caramelized.

Add garlic to the caramelized onions and set aside.

Fry the large mushroom chunks until they release their liquid.

Add the mushroom duxelle to the pan and fry until all liquid has evaporated and mushrooms are browned.

Add the fried onions and smoked tofu to the mushrooms.

Pour in a glug of Luxembourgish wine and let it cook down.

Stir in cream and a mix of tarragon and parsley.

Add a bit of cornstarch to thicken the sauce.

Assemble the dish with the puff pastry and add the top hat.
