Whole wheat pastry adds fiber and nutrients.
Preheat the oven to 400°F (200°C).
Roll out the puff pastry on a lightly floured surface.
In a skillet, melt butter over medium heat and sauté chopped onion and garlic until translucent.
Add sausage meat to the skillet, breaking it up with a spoon, and cook until browned.
Stir in chopped parsley, mustard, salt, pepper, and nutmeg, mixing well.
Remove the mixture from heat and let it cool slightly.
Cut the puff pastry into rectangles, large enough to wrap around the sausage filling.
Place a spoonful of the sausage mixture on one end of each pastry rectangle.
Roll the pastry over the filling to form a log and seal the edges with a fork.
Place the rolls seam-side down on a baking sheet lined with parchment paper.
Brush the tops with beaten egg and sprinkle with sesame seeds.
Bake for 20-25 minutes or until golden brown and puffed up.
Remove from the oven and let cool slightly before serving.
