1

Start by adding 1 cup sugar and 1/2 cup water into a heavy bottom pan.

2

Stir the sugar and water together to mix.

3

Add 1 teaspoon vanilla extract to the mixture.

4

Bring the mixture to a boil on medium-high heat, then lower to medium heat to let it simmer and thicken.

5

To check if the syrup is ready, let a little cool on a spoon and look for a one-string consistency when rubbed between fingers.

6

Once the syrup reaches the desired consistency, add in 1/2 cup peanut butter and mix well.

7

Add 1 cup crushed peanuts to the mixture and stir to combine.

8

Gradually add in 1 cup milk powder, starting with half to avoid it becoming too dry.

9

Once mixed, pour the mixture into a greased or parchment-lined pan and press down with a silicone spatula to smooth the top.

10

Sprinkle additional crushed peanuts on top and press them in with the back of a measuring cup.

11

Score the top of the mixture into desired squares using a bench scraper or sharp knife before it hardens.

12

Let the barfi sit at room temperature for about 2 hours to solidify.
