Baked Cod with Potatoes

4 cod fillets
4 medium potatoes, sliced
1/4 cup olive oil
2 cloves garlic, minced
1 lemon, juiced
1 tsp dried thyme
1 tsp paprika
1/2 tsp salt
1/4 tsp black pepper
2 tbsp fresh parsley, chopped

Preheat the oven to 400°F (200°C).

In a large baking dish, arrange the sliced potatoes evenly on the bottom.

In a small bowl, mix together the olive oil, minced garlic, lemon juice, dried thyme, paprika, salt, and black pepper.

Pour half of the olive oil mixture over the potatoes and toss to coat evenly.

Place the cod fillets on top of the potatoes in the baking dish.

Drizzle the remaining olive oil mixture over the cod fillets.
