Greek Quesadillas

200 g champignon mushrooms
2 spring onions
1/4 bunch parsley
50 g olives
2 tablespoons vinegar
salt

200 g cheddar cheese
100 g gruyere cheese
100 g feta cheese
6 souvlaki pita breads

Preheat the oven to 180°C (350°F) set to fan.

Place a frying pan over high heat and add the olive oil.

Cut the mushrooms into thin slices and add them to the hot frying pan. Sauté for 5-6 minutes until they decrease in volume.

Remove, add into a bowl, and set aside to cool.

In the bowl with the mushrooms add the spring onions finely chopped, the parsley finely chopped, the olives, the vinegar, pepper, and mix with a spoon.

In another bowl add the cheddar, the gruyere, the feta crumbled with your hands, pepper, and mix well with a spoon.

In a baking pan lined with parchment paper, lay 3 pitas for souvlaki.

Divide the mushroom mixture to the pitas, the cheese mixture on top of the mushrooms, and cover with the remaining three pitas.

Bake for 10 minutes.

Sprinkle with finely chopped spring onion and serve.
