plain Greek yogurt
1 cucumber
2 cloves garlic
1 lemon
1 tablespoon dill
1 teaspoon fresh mint
2 tablespoons olive oil
spinach
sun-dried tomatoes
chopped kalamata olives
mozzarella cheese
feta cheese

Preheat the oven to 400 degrees.

Finely dice 1 cucumber.

Dice 2 cloves of garlic.

Juice 1 lemon and add the juice to the mixture.

Dice 1 tablespoon of dill and add it to the mixture.

Add 1 teaspoon of fresh mint to the mixture.

Add 2 tablespoons of olive oil to the mixture.

Mix all the sauce ingredients together and let it sit in the refrigerator for about 10 minutes.

Lay out the tortillas on a pan.

Place a little bit of spinach on each tortilla.

Add sun-dried tomatoes on top of the spinach.

Sprinkle chopped kalamata olives over the sun-dried tomatoes.

Add mozzarella cheese and feta cheese on top of the olives.

Place another tortilla on top of each filled tortilla.

Bake in the oven for about 8 to 10 minutes until the tortillas are browned and the cheese is melted.

Remove from the oven and cut the quesadillas into pieces.

Sprinkle a little extra dill over the top before serving.
