1

Prepare the dough by taking 2 cups of all-purpose flour in a bowl.

2

Add 1 teaspoon of salt to the flour.

3

Gradually add water (approximately 1 glass) to the flour, mixing until a smooth and soft dough forms.

4

Knead the dough for about 10 minutes until it's well combined.

5

Add a little cooking oil to the dough and cover it, letting it rest for 20 minutes.

6

Heat a kadhai (wok) on high heat and add 1 tablespoon of cooking oil.

7

Once the oil is hot, add 15-20 finely chopped garlic cloves and 1/2 inch chopped ginger, sautéing for 15-20 seconds.

8

Add 3 finely chopped green chilies and sauté briefly.

9

Add 2 medium-sized chopped carrots and chopped cabbage, frying on high flame for 2-3 minutes to remove moisture.

10

Season the mixture with 1 teaspoon of black pepper and salt to taste. Optionally, add MSG.

11

Mix everything well and cook for an additional 2 minutes on high flame before turning off the heat.

12

Knead the dough again for 7-8 minutes until it's smooth and soft.

13

Divide the dough into small balls, dusting with dry flour to prevent sticking.

14

Roll each ball into a thin circle, ensuring even edges, resembling a crown shape.

15

Place the rolled dough on a plate and repeat with the remaining dough.

16

Prepare a steaming setup by boiling water in a large pot and placing a stand inside.

17

Carefully place the momos in the steamer, stacking them if necessary, and cover with a cloth and a large plate.

18

Steam the momos on medium flame for 20-25 minutes.

19

After 20 minutes, check the momos to see if they are ready.
