1

Wash and finely chop the gandana (chives or leeks).

2

In a bowl, mix the chopped leeks with oil, black pepper, and salt to taste. Knead until the leeks become soft.

3

Place 1 to 2 teaspoons of the drained leeks on half of the dough rounds and cover with the other half. Pinch to seal.

4

Place the prepared ashak on a floured tray, ensuring they do not touch each other.

5

Heat oil in a pan, add finely chopped onion and crushed garlic, and fry until brown.

6

Add the ground meat and cover the pan to cook.

7

Once the meat is brown, add salt, red pepper, coriander, turmeric, and the can of tomato sauce. Bring to a boil.

8

Lower the heat and simmer, then add the can of garbanzo beans and cook until the sauce thickens.

9

Bring water to a boil in a large pan and drop in the dumplings, boiling gently for about 10 minutes. Drain them.

10

Serve the dumplings on a plate topped with yogurt, remaining meat sauce, and sprinkle with dry mint.
