350 g Flour

1 Long Red Marconi paprika
1 Big white onion
2 Cloves garlic
1 ½ tbsp Biber Salcasi Turkish red pepper paste
1 tbsp Tomato paste
2 tsp Ground cumin
1 tsp Salt
1 tsp Smoked paprika powder
1 tsp Ground coriander powder
1 tsp Oregano
1 hand Parsley
250 g Ground beef

Add lukewarm water into a big bowl and add the sugar and yeast. Mix this.

Add salt and flour and mix this by hand or in a kitchen machine until it's a nice smooth dough.

Leave this to rest in the bowl covered with a towel for 1 hour.

To make the topping, add the Long Red Marconi paprika, chopped white onion, garlic, Biber Salcasi, tomato paste, ground cumin, salt, smoked paprika powder, ground coriander powder, and oregano to a kitchen machine. Mix it but ensure it has a chunky structure.

Add parsley and ground beef to the mixture and pulse to combine without overdoing it. Set this in the fridge.

After 1 hour, take the dough out of the bowl and add it to a floured workspace. Cut the dough into 8 even pieces and roll them into balls. Cover with a tea towel.

Roll out one ball of dough as flat as possible, using enough flour on the workspace.

Spread the ground beef mixture evenly over the rolled-out dough.

Place the Lahmacun in a preheated oven at 260℃ for 6-8 minutes.
