Mix granulated sugar, vanilla sugar, cornstarch, and 1 egg in a bowl.
Add milk gradually in small portions while stirring continuously.
Cook over medium heat, stirring until the cream thickens, about 2 to 3 minutes after it starts boiling.
Once the cream is smooth and thick, remove from heat and add butter, mixing well until fully combined.
Transfer the cream to a clean bowl and cover with plastic wrap directly on the surface to prevent a skin from forming. Leave to cool and chill completely in the refrigerator.
Combine soft butter with sugar in a bowl and beat until creamy.
Add 4 egg yolks one at a time, continuing to beat after each addition.
Add milk and stir to combine.
Sift flour and baking powder into the mixture and mix into a softened dough.
Spread the batter into a rectangular pan lined with parchment paper and smooth it evenly.
Beat the egg whites in a bowl until foamy, then add vanilla sugar.
Gradually add granulated sugar in small portions while whipping continuously until glossy peaks form.
Spread the meringue evenly over the batter in the pan.
Sprinkle with 2 to 3 tablespoons of almond flakes.
Bake in the preheated oven for 30 to 35 minutes until golden.
Let the cake cool completely.
Whip cold cream to soft peaks in a bowl.
Take the chilled cream from part one and beat with a mixer, then gently fold in the whipped cream using a silicon spatula. If necessary, mix briefly with a hand mixer on low speed.
Slice the cooled cake layer in half horizontally.
Spread the cream over the bottom half of the cake, then cover with the top half.
Optionally chill for 1 hour before serving.
Dust with powdered sugar before serving.
