Puerto Rican Empanadas

Set frying pan to medium heat.

Add 1 pound of ground beef to the pan.

Cut sweet plantains down the middle and then into about four pieces each.

Fry plantain pieces in a deep fryer at 350 degrees for about 4-5 minutes.

Chop red onion and sweet red peppers for the meat mixture.

Drain ground beef after a few minutes of cooking.

Add chopped red onion, sweet red peppers, and garlic to the ground beef.

Chop fresh cilantro and add it to the meat mixture.

Add a couple tablespoons of homemade sofrito to the mixture.

Add 1 package of sazon, some tomato sauce, and a little bit of water to the meat mixture.

After frying, check the maduros for golden crispy edges and remove them from the fryer.

Lay an empanada disc flat and add a layer of monterey jack cheese on the bottom.

Add a couple pieces of fried sweet plantain on top of the cheese.

Add a couple tablespoons of the savory meat mixture on top of the plantains.

Top with a second layer of havarti cheese.

Fold the empanada over and press down the edges to seal.

Crimp the edges with a fork for a better seal.

Heat deep fryer to 350 degrees for frying.

Add two empanadas to each basket of the deep fryer, cooking four at a time.

Fry empanadas for about three minutes until flaky golden and crunchy.

Remove empanadas from the fryer after about three and a half minutes.
