Ilish Polao/ Pulao ( Hilsa Fish Pulao) Recipe by Foodie's Hut #0157

Wash the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.

In a large pot, heat the mustard oil over medium heat. Add the sliced onions and sauté until golden brown.

Add the cumin seeds, bay leaves, cloves, cardamom pods, and cinnamon stick to the pot. Sauté for a minute until fragrant.

Stir in the turmeric powder and slit green chilies, cooking for another minute.

Add the Ilish fish pieces to the pot, gently coating them with the spices. Cook for 2-3 minutes on each side, being careful not to break the fish.

Remove the fish from the pot and set aside. In the same pot, add the soaked and drained rice, stirring gently to mix with the spices.

Pour in the water and add salt to taste. Bring to a boil, then reduce the heat to low and cover the pot.

Cook the rice for about 15-20 minutes, or until the water is absorbed and the rice is tender.

Once the rice is cooked, gently fluff it with a fork and place the Ilish fish on top of the rice. Cover and let it steam for an additional 5 minutes.

Garnish with fresh coriander leaves before serving.
