Add 1 and 1/2 cups of warm water to a bowl.
Add 2 teaspoons and 1/4 teaspoon of yeast to the bowl.
Add 3 cups of all-purpose flour to the bowl.
Add 1 teaspoon of salt to the bowl.
Mix the ingredients together gently.
Add 1 and 1/2 to 2 cups of double cheddar cheese to the mixture, incorporating it well.
Spray the bowl with cooking spray and place the dough back in the bowl.
Cover the bowl and let the dough rise for about 1 to 1 and 1/2 hours until it doubles in size.
Preheat the oven to 450°F and place a Dutch oven inside to heat for about 10 minutes.
Dump the dough onto a large sheet of parchment paper and shape it if necessary.
Carefully remove the hot Dutch oven from the oven.
Transfer the dough into the hot Dutch oven.
Optionally, top the dough with extra cheese before covering it with the lid.
Bake in the oven at 450°F for about 25 minutes with the lid on.
Remove the lid and broil for about 5 to 10 minutes, keeping an eye on it to avoid burning.
Let the bread cool before cutting it open.
