Cut the French bread in half.
In a mixing bowl, combine chopped black olives, diced green onion, shredded sharp cheddar cheese, mayonnaise, and Dijon mustard.
Fold the ingredients together to make the olive cheese spread.
Spread the olive cheese mixture generously on the cut sides of the French bread.
Top with sliced habanero jack cheese or Swiss cheese if preferred.
Preheat the convection oven to 350°F or regular oven to 375°F.
Bake in the convection oven for about 10 minutes or in the regular oven for 12 to 15 minutes until golden brown.
Let the bread cool for a couple of minutes before cutting into one-inch thick pieces.
