Split the lobster open by turning it upside down and cutting down the center with a sharp knife.
Cut through the tail to create two lobster halves.
Clean out the insides of the lobster and rinse with salty water.
Lightly oil the flesh side of the lobster and season with salt and pepper.
Preheat the grill to high heat and ensure the cooking grills are clean.
Grill the lobster flesh side down for about 2 minutes until you are happy with the color and caramelization.
Flip the lobster over to shell side down and add dollops of garlic butter on top.
Close the lid and cook for another 2 minutes to allow the butter to melt through.
While the lobster is cooking, grill lemons on the side to caramelize them.
Prepare the gremolata by mixing freshly chopped parsley, a garlic clove, the zest and juice of one whole lemon, olive oil, salt, and pepper.
