Traditionally made with minced meat and potatoes, it embodies comfort food, often served over rice and topped with a fried egg. Today, Minchi has seen many variations, with chefs experimenting with different meats and sauces, making it a versatile dish enjoyed by many.

Marinate minced pork and beef with salt, sugar, black pepper, white wine, light soy sauce, and dark soy sauce for 30 minutes.
Finely chop the pork and beef into a fine dice.
Prepare 250 grams of sausage (Harbin sausage) and mix with rose wine and sugar if desired.
Peel and cube 500 grams of potatoes, blanch in boiling water for 2 minutes, then drain.
Pan-fry the potatoes for about 20 minutes until golden brown.
Heat a wok and add 1 tablespoon of oil, then add the marinated minced meat and sausage, cooking for about 5 minutes until crumbly.
Lower the heat and stir-fry the meat for another 5 minutes to expel moisture and brown it.
In the same wok, add another tablespoon of oil and fry 1 finely diced red onion for 5 minutes until softened.
Add minced garlic and bay leaves, frying for another 30 seconds.
Pour in white wine and add the sausage, stir-frying for another 30 seconds.
Add the cooked minced meat back into the wok, season with salt, sugar, light soy sauce, and black pepper, and stir-fry for 30 seconds.
Finish with a swirl of rice vinegar and remove from heat.
To serve, spoon the minchi over a plate of white rice, arrange fried potatoes around it, and top with a fried egg.
