Cantonese Crab Congee, a beloved dish in Macau and southern China, reflects the region's seafood bounty and culinary tradition of rice porridge. Traditionally served as a comforting meal, it's often enjoyed during family gatherings or as a remedy for illness. Today, congee has found global popularity, with variations incorporating local ingredients and flavors, making it a versatile dish enjoyed by many.

Prepare shrimp stock by adding shrimp shells and 2 cups of water in a saucepan.
Bring to a boil and simmer on medium to low heat for 15 minutes.
Use a sieve to remove the shrimp shells and keep the shrimp stock.
Add shrimp stock and water to a pot to make the congee.
Boil the mixture for 5 minutes on high heat, then reduce to low heat and simmer for 30 minutes.
After 30 minutes, add crab and crab butter to the congee.
Add a few slices of ginger and a small branch of spring onion.
Add more water if necessary, then simmer on low heat for 15 minutes.
Cover the pot and let it sit for another 15 minutes to achieve a creamy texture.
Add a pinch of salt and pepper to taste, then garnish with spring onion.
