Instructions
- 1Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
- 2In a large bowl, combine the chopped parsley, cilantro, olive oil, red wine vinegar, minced garlic, red pepper flakes, salt, and black pepper to make the chimichurri dressing.
- 3Add the cooled pasta to the bowl with the chimichurri dressing and toss to combine.
- 4Add the cherry tomatoes, red onion, and bell pepper to the pasta and mix well.
- 5Taste and adjust seasoning if necessary, adding more salt or pepper as desired.
- 6Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
- 7Before serving, give the salad a good toss and garnish with additional parsley if desired.
