Balushahi, a traditional Indian sweet, is believed to have originated in North India, often enjoyed during festivals and special occasions. Its flaky texture and syrupy sweetness make it a beloved treat, reflecting the rich culinary heritage of Indian desserts. Today, variations can be found across the country, with each region adding its unique twist to this classic.

Cinnamon offers a warm flavor and is often more affordable.
Add white flour to a bowl.
Add thick ghee to the flour and mix well.
Add baking powder and mix with soft hands.
Gradually pour in water and mix until the dough is soft, do not knead too much.
Cover the dough and let it rest for 15 to 20 minutes.
Prepare sugar syrup by adding sugar to a bowl and heating it with water until it reaches one-string consistency.
In a separate pan, add ghee and evaporated milk solids, and stir until melted.
Add dry fruits to the mixture and roast them.
Add cardamom powder and saffron to the sugar syrup and mix well.
Make balls from the dough and shape them into ovals, adding stuffing in the middle if desired.
Pack the balls properly to prevent them from opening while frying.
Fry the shaped balushahi in medium heat ghee until golden brown, turning occasionally.
Dip the fried balushahi in sugar syrup for 3 minutes.
Garnish with pistachios before serving.
