In a separate pan, heat oil and fry sliced potatoes until golden and crispy, about 5-7 minutes.
Remove potatoes and set aside; keep warm.
Once beef is tender, crack eggs directly into the pot, cover, and cook until eggs are set, about 5-7 minutes.
Garnish with chopped spring onions before serving.
Serve hot with crispy potatoes on the side.
