Nigerian Eggrolls are a popular snack often enjoyed at parties and celebrations. They are a delightful fusion of local flavors, featuring a savory filling encased in a crispy dough. Traditionally, these eggrolls are made with a variety of fillings, showcasing the rich culinary diversity of Nigeria. Today, they are loved not just in Nigeria but also by food enthusiasts around the world, often served as appetizers at gatherings.

Sift flour to remove debris and add salt, mixing it together.
Add water to the flour mixture and mix until a dough forms.
Knead the dough until it's not smooth, then let it rest for about 30 minutes.
Knead the dough again until it's super smooth, then cut it into 10 pieces.
Shape each piece into a ball and flatten it slightly.
Roll out the dough pieces, stacking them with a bit of oil and flour in between to prevent sticking.
Roll out the stacked dough into a larger sheet, using a guide to cut out perfect circles if desired.
Heat a frying pan and cook the dough until it separates easily, ensuring it looks transparent.
Prepare the filling by heating oil in a pan and adding garlic, onions, carrots, and cabbage.
Add seasoning cubes and salt to the vegetable mixture and stir well before removing from heat.
Make a slurry with flour and water to help seal the spring rolls.
Place the vegetable filling into the dough wrapper, fold it, and seal the edges with the slurry.
Repeat the filling and folding process for all 10 wrappers.
Heat oil for frying, ensuring it's not too hot to avoid soggy rolls or burning.
Fry the spring rolls until crispy and golden brown, then remove and drain on paper towels.
