Defrost puff pastry a few hours before using.
Dice the onion into medium-sized pieces and finely chop the ginger and green chili.
Boil 3-4 medium-sized potatoes until tender, then mash them or cut into small pieces.
Heat 2 tablespoons of cooking oil in a pan over medium heat.
Add 1 teaspoon of jeera and 1 teaspoon of crushed coriander seeds to the hot oil.
Add a pinch of hing, chopped green chilies, and ginger; roast for 10-15 seconds.
Add diced onion and cook for about 2 minutes to remove raw flavor.
Add 1/2 cup of green peas and cook lightly for about 1 minute.
Add 1 teaspoon salt, 1/2 teaspoon red chili powder, a pinch of haldi, 1 teaspoon dunnia powder, and 1 teaspoon amchur; mix well with a few drops of water.
Add the mashed potatoes and mix thoroughly until well combined.
Taste and adjust salt; add a pinch of sugar and squeeze in 1/4 of a lemon.
Add chopped cilantro and mix again; set aside to cool.
Spread out the defrosted puff pastry gently and cut into six square pieces.
Preheat the oven to 400° F.
Place potato filling on each piece of puff pastry and shape as desired.
Fold the pastry over the filling and seal edges if desired.
Transfer patties to a baking tray and bake at 400° F for 10-12 minutes, flipping halfway, until golden brown.
