Breadfruit and Saltfish Fritters

1 breadfruit
salted cod fish
2 sprigs thyme
2 scallions
1 tomato
1 small onion
1 scotch bonnet pepper
1.5 teaspoons salt

Wash the breadfruit and cut it into chunks.

Boil water in a pot and add a little salt for the breadfruit.

Peel the breadfruit, remove the heart, and cut it into pieces.

Soak the salted cod fish in cold water overnight to remove excess salt.

Cut the tomato, removing most of the inside, and dice it.

Dice the scallions finely.

Pull the leaves off the thyme sprigs and set aside.

Boil the breadfruit until cooked, then turn off the heat and check with a fork.

Break the soaked cod fish into small pieces.

Mash the cooked breadfruit in a bowl until it's not smooth, similar to mashed potatoes.

Add 1.5 teaspoons of salt to the mashed breadfruit and mix it in.

Scrape the diced scallions and tomatoes into the mashed breadfruit.

Season the mixture with black pepper and add diced scotch bonnet pepper.

Drizzle olive oil into the mixture to help combine the cod fish properly.

Let the breadfruit cool down enough to handle it with your hands.

Mix the salted fish, tomatoes, scallions, and other ingredients together by hand.

Flatten the fritter mixture into thin patties.

Heat oil in a pan over medium heat and drop the fritters into the oil.

Fry the fritters until they are golden brown on the outside.

Remove the fritters from the oil and place them on a plate.

Garnish the plate with cut tomatoes and serve the fritters.
