Mix dry ingredients: flour, sugar, baking powder, baking soda, yeast, and salt.
Mix 3/4 cup cold butter with the dry ingredients by hand.
In another bowl, mix wet ingredients: 1 egg, 0.5 cup yogurt, 0.5 cup sour cream, 0.25 cup milk, and 1 teaspoon honey.
Combine wet and dry ingredients gradually until the dough is ready and not sticking to hands.
Refrigerate the dough for at least 2 hours.
Make the filling by mixing flour, sugar, and butter, or use almond flour with crushed walnuts, sugar, and butter.
Brush the top of the dough with egg whites before adding the filling.
Spread the filling evenly, leaving 3/4 inch at the end to seal.
Roll the dough and pinch the end to seal it.
Cut the rolled dough with a fork to create designs and allow air to escape.
Cut the second roll diagonally for easier handling.
Egg wash the entire roll before baking.
Bake at 375°F for the first 7 minutes, then move to a higher rack and bake for an additional 10-15 minutes.
