Mix 1/4 teaspoon of salt with flour.
Rub butter from the freezer into the flour using a fine grater until it resembles crumbs.
Chill the mixture in the freezer for 15 minutes.
Combine egg yolks with sour cream and mix well.
Quickly gather the dough into a bowl without kneading too long.
Refrigerate the dough for 30 minutes, or cover with plastic.
For the filling, add flour and rub in ice-cold butter until crumbly.
Add sugar and vanilla sugar to the filling and mix with hands.
Divide the dough into two parts and roll out one part into a rectangular shape.
Spread half of the filling evenly over the rolled-out dough.
Fold the dough over to enclose the filling and brush with egg yolks.
Cut into pieces using a knife.
