Bring 454 grams of unsweetened butter to room temperature.
Separate 1 stick of butter and add it to a bowl with 1 cup of flour and 3/4 cup of sugar; mix and set aside.
In a different bowl, add the remaining butter and 3 cups of flour, then 1 tablespoon of dry yeast.
Mix the ingredients to form a dough, adding 6 ounces of sour cream before adding more flour if needed.
Transfer the dough to the countertop and knead it, then divide into 8 equal parts.
Refrigerate the dough for about half an hour to firm it up.
Prepare the filling by fluffing the reserved butter, flour, and sugar mixture with a fork.
Take the dough out of the refrigerator and roll each portion into 6 by 8 squares.
Fill each square with the prepared filling and shape into gata.
Apply egg yolk on top of each gata before baking.
Bake in a toaster oven at 350 degrees until golden.
