8 cups water
½ large onion, diced into large chunks
4 garlic cloves, crushed and peeled
1 packet tamarind seasoning mix
Salt, to taste
2 tbsp fish sauce
2 cups diakon, peeled and sliced
2 jalapeno peppers, trimmed
1 cup green beans, trimmed and cut in 2 in lengths
3 heads bok choy, trimmed

Prepare the onion, garlic, daikon, jalapeno peppers, green beans, and bok choy.

Boil water in a large pot over medium-high heat. Once the water starts boiling, add the pork soft bones. Cover and let it return to boil then add the onions and garlic. Cover and simmer for 45-60 minutes over medium-low heat until the meat is tender.

Add the sliced daikon and cook for 5 minutes.

Add the jalapeno peppers and green beans. Cook for 2 minutes.

Add the bok choy and cook until slightly wilted.
