Chickpea flour is more affordable and still provides a good texture.

Vegetable oil is often less expensive.
Soak urad dal in water for 4-6 hours or overnight.
Drain the soaked dal and transfer to a blender.
Add a small amount of water and blend to a smooth batter.
Transfer the batter to a bowl and mix in chopped onion, green chilies, ginger, curry leaves, black pepper, and salt.
Heat oil in a deep frying pan over medium heat until hot.
Wet your hands and take a small portion of the batter.
Shape it into a donut or disc and carefully drop it into the hot oil.
Fry the vadas in batches, ensuring not to overcrowd the pan.
Cook until golden brown and crispy, about 3-4 minutes per side.
Remove vadas with a slotted spoon and drain on paper towels.
Serve hot with coconut chutney or sambar.
