½ tsp black salt
½ tsp chat masala
¼ cup dahi / curd
1 tbsp mint leaves
2 tbsp fresh coriander
2 tbsp dahi
1 tbsp mustard oil
1 tsp mustard seeds
½ tsp ginger garlic paste

Combine besan, water, citric acid, lemon juice, sugar, salt, yellow color, yellow chilli powder, and baking soda in a bowl to form a smooth batter.

Let the batter rest for a few minutes.

Grease a steaming tray or plate with oil.

Pour the batter into the greased tray, spreading it evenly.

In a small bowl, mix together the tandoori marinate ingredients: red chilli paste, black salt, chat masala, dahi, mint leaves, fresh coriander, and mustard oil.

Add mustard seeds and ginger garlic paste to the marinate mixture.

Drizzle the marinate over the dhokla batter in the tray.

Place the tray in the steamer and cover with a lid.
