In a large mixing bowl, add 2 large eggs and 2 tablespoons of granulated sugar.

Use an electric mixer to beat the eggs and sugar together on high speed for about 3 minutes until fluffy.

Add 1/2 cup of light olive oil, 1 and 3/4 cups of milk, and 2 teaspoons of vanilla extract to the egg mixture.

In a separate bowl, whisk together 2 cups of all-purpose flour, 4 teaspoons of baking powder, and 1/4 teaspoon of salt.

Add the dry ingredients to the wet ingredients and mix on low speed until well combined, leaving some small lumps in the batter.
