Tonga Toast

1/2 teaspoon cinnamon
1/3 cup granulated sugar

Cut gluten-free sourdough bread into 3-inch thick slices.

Cut a hole in the center of each slice to create a pocket.

Stuff the pocket with banana slices.

In a bowl, mix 1 egg, 1/4 cup non-dairy milk, 1/2 teaspoon cinnamon, and a little sugar to create an egg wash.
