Slice brioche bread into three or four thick pieces.

Create a slit on one side of each bread slice and stuff with banana pieces.

Whisk together eggs, milk, sugar, cinnamon, and vanilla to make the batter.

Dunk each stuffed slice into the batter mixture, coating all sides.

Heat about a quarter of an inch of vegetable oil in a skillet over medium heat.

Add the battered bread to the skillet and cook until crispy, about two minutes per side.

Drain the cooked toast on a wire rack to remove excess oil.

Toss the warm toast in a cinnamon and sugar mixture.

Slice about 1 1/2 cups of fresh strawberries and add to a skillet with sugar, lemon juice, and vanilla.

Bring the strawberry mixture to a simmer and cook on low for about five minutes, mashing gently before serving.
