Tonga Toast

4 Large Eggs
1 1/3 cup whole milk
1/4 tsp cinnamon
1 tbsp granulated sugar
3/4 cup granulated sugar
2 tsp cinnamon
1 quart canola oil
1 loaf sourdough bread, uncut 12 inches long

Combine sugar and cinnamon in a medium bowl large enough to roll the toast slices. Blend together thoroughly and set aside.

Whip eggs in a medium bowl large enough to dip toast slices until well beaten.

Add the milk, cinnamon, and sugar to the eggs. Mix well and set aside.

Carefully pre-heat canola oil to 350 degrees in a large pot or deep fryer.

Slice the bread into four 3 inch thick slices.

Cut into the top of each bread slice about 2-3 inches to place the banana slices inside.

Cut each banana in half crosswise, then cut each half again lengthwise.

Place the banana slices inside the bread so you have a bread/banana taco.

Dip each stuffed bread slice into the batter, covering all sides. Allow all batter to drip off.

Carefully place the stuffed and coated bread into the pre-heated oil.

Cook each slice for 4-5 min, or until golden brown, turning as necessary.

Remove and let excess oil drain.

Carefully roll each stuffed bread slice in the cinnamon-sugar mixture, coating completely.
