4 thick pieces of Texas toast or sourdough bread
2 eggs
1 cup milk
1/2 teaspoon cinnamon
1/2 tablespoon sugar
1/2 cup sugar

Mix 1/2 cup sugar and 1 teaspoon cinnamon on a plate and set aside.

In a large bowl, whisk together 2 eggs, 1 cup milk, 1/2 teaspoon cinnamon, and 1/2 tablespoon sugar to make the batter.

Cut 1 banana in half crosswise and then cut each half into half again.

Hollow out the centers of 2 pieces of bread to create space for the banana.

Sandwich the banana pieces between the hollowed bread pieces.

Heat about 2 inches of oil in a deep skillet to 350 degrees.

Dip the sandwich in the batter completely on all sides.
