15g scallion
2 slices garlic
1 piece ginger (thumb-sized)
½ tbsp African chili sauce
¼ tbsp fresh thyme
¾ tsp allspice
1 lime (juiced)
¼ cup red wine vinegar
a pinch of salt
a pinch of black pepper
4 pieces bass
6 tbsp olive oil
½ cup onion (diced)
1 tsp minced garlic
1 sweet pepper (diced)
1 tsp thyme powder
2 ½ tsp curry powder
1 tbsp garlic powder
1 can crushed tomato
100g butter
3 tbsp Bajan sauce
a pinch of salt
a pinch of black pepper

Make the Bajan sauce: Blend the ingredients and store in the fridge. This sauce is great for grilling steaks, stir-frying, and stewing!

Marinate the fish for half an hour.

Stew the vegetables: Sauté onion and sweet pepper. Add the remaining ingredients and cook. Finally, add the fish and simmer for 40 minutes.

Prepare the cou cou cornmeal. It has a grainy texture, combined with the creaminess of okra, creating a rich mouthfeel. Of course, you can also serve it with rice or noodles! Mashed potatoes work too.
