sugar

🥗Healthier: honey

💰Cheaper: jaggery

Honey is a natural sweetener, while jaggery is often cheaper and adds a unique flavor.

milk

🥗Healthier: almond milk

💰Cheaper: water

Almond milk is lower in calories, while water can be used to reduce richness.

1

In a bowl, add 1 cup of whole wheat flour (ATA) and 1/4 cup of semolina (suji rava).

2

Add 1 tablespoon of powdered sugar, 1/2 teaspoon of cardamom powder, and 1/4 teaspoon of fennel powder, then mix well.

3

Pour in 2 cups of boiled and cooled milk and mix everything well using a whisk to achieve a pouring consistency.

4

Let the batter sit for about 30 minutes.

5

To make the sugar syrup, add 1 1/2 cups of sugar and 1 1/2 cups of water to a saucepan and bring to a boil.

6

Once the sugar dissolves, add a few saffron strands and let it boil for about 5 minutes until slightly thickened.

7

If the batter is too runny after 30 minutes, add 1 to 2 tablespoons of whole wheat flour (ATA) to adjust the consistency.

8

Heat 1/4 cup of oil in a pan over low flame.

9

Pour a ladle of batter into the center of the pan and fry for about 5 minutes on one side.

10

Gently flip the malpua using tongs and fry until golden brown on both sides.

11

Remove the malpua from the oil and place it aside.

12

Drop the fried malpuas into the sugar syrup and let them soak for at least 20 minutes.

13

Remove from syrup and serve immediately, garnished with chopped pistachios.
