Tam Mak Hoong

Cultural Context

Tam Mak Hoong, or green papaya salad, hails from Laos and is a staple in its cuisine, often enjoyed as a refreshing dish during hot weather. Traditionally made with fresh, raw ingredients, it embodies the balance of flavors that is central to Lao cooking. Today, it has gained popularity across Southeast Asia and beyond, with variations appearing in many international menus.

250g green papaya
50g green beans
70g cherry tomatoes (5 pieces)
1 tbsp dried shrimp
50g fried peanuts
5g Thai chili (2 pieces)
10g garlic (2-3 cloves)
1 lime
1 tbsp fish sauce
1 tsp salt
1 tbsp sugar
pinch of shrimp paste

Wash, peel and shred the green papaya.

Boil the green beans for around 3 minutes, then cut them into 5cm long pieces.

Cut the lime and cherry tomatoes into halves.

With a mortar and pestle, combine the garlic, Thai chili, dried shrimp, fish sauce, salt, sugar, and shrimp paste. Crush well.

Squeeze the lime into the mixture and add the peel.

Add the green papaya and cherry tomatoes to the crushed mixture. Crush slightly.

Add green papaya into the sauce and mix well with a spoon.

Serve on a deep dish and garnish with peanuts.
