Marinate beef flank in a mixing bowl with salt, mixing until fully absorbed.
Add white pepper and cornstarch slurry to the beef, mixing well, and marinate for about 30 minutes.
Prepare the wide rice noodles by microwaving them for about 3 minutes to make them more flexible, then cut into 1-inch pieces.
Make the sauce by combining soy sauce, dark soy sauce, oyster sauce, water, and white pepper.
Heat 2 tablespoons of vegetable oil in a wok over high heat, then transfer the marinated beef into the wok without stirring immediately to allow a good sear.
After a beautiful sear, stir-fry the beef for about 3 minutes, then remove from the wok.
Add 1 tablespoon of oil to the wok, then add onions and cook until aromatic for about 30 seconds.
Add another tablespoon of oil, then add the rice noodles and stir-fry for about 1 minute until aromatic.
Return the beef and onions to the wok, add the sauce, and mix everything together.
Lastly, add the bean sprouts and scallion, mixing everything together without overcooking the noodles.
