Rice Chakli

1 cup water
1 tsp oil
½ tsp crushed peppercorn
½ tsp fennel powder
1 tsp coriander powder
1 tsp cumin powder
½ tsp salt
1 pinch asafoetida

Heat 1 cup water in a vessel until it simmers.

Add 1 tsp oil, ½ tsp crushed peppercorn, ½ tsp fennel powder, 1 tsp coriander powder, 1 tsp cumin powder, ½ tsp salt, and 1 pinch asafoetida to the boiling water and turn off the flame.

Mix well and add 1 cup rice flour into the water, stirring with a spoon.

Cover and let the mixture sit for 20 minutes.

After 20 minutes, knead the dough in a big bowl until stiff and tight, adding 1 to 2 tsp water if required.

Grease hands with oil and knead the dough until smooth.

Heat sufficient oil in a wok for frying.

Prepare a polythene sheet for placing the chaklis and fill the chakli maker with the dough.

Make chaklis on the polythene sheet in a spiral shape.

Check if the oil is hot enough by dropping a small dough ball into it.

Gently separate the chakli from the polythene sheet and place it in the hot oil for frying.

Fry 3 to 4 chaklis at a time, keeping the flame medium.

Fry until the chaklis turn golden brown, about 6 to 7 minutes per batch.

Remove the fried chaklis from the oil and allow them to cool before storing.
