Vegetable broth is lighter and can be made easily.
Prepare beef oxtail and beef tripe by boiling in 1 liter of water until tender, about 2-3 hours.
Drain and set aside the oxtail and tripe, reserving the broth.
Heat vegetable oil in a large pot over medium heat until shimmering.
Sauté minced garlic and chopped onion until fragrant and translucent, about 3-4 minutes.
Add the oxtail and tripe to the pot and stir to coat with the aromatics.
Pour in the reserved broth and bring to a simmer.
Stir in ground peanut and rice flour until fully incorporated and smooth.
Add soaked anatto seed, pechay, sliced puso ng saging, sliced string beans, and sliced eggplant to the pot.
Simmer until vegetables are tender, about 10-15 minutes.
Season with fish sauce, sugar, salt, and black pepper to taste.
