Add the oxtail to the pot and stir to coat with the aromatics.
Pour in the reserved beef broth and bring to a simmer.
Stir in peanut butter until fully incorporated and smooth.
Add bitter melon, eggplant, banana heart, and string beans to the pot.
Simmer until vegetables are tender, about 10-15 minutes.
Season with fish sauce, salt, and black pepper to taste.
Serve hot with steamed rice and a side of shrimp paste.
