Kare Kare is a beloved Filipino stew with roots in the culinary traditions of the Tagalog region. Traditionally made with oxtail and a rich peanut sauce, it often features vegetables and is served with shrimp paste on the side. This dish is a staple during celebrations and family gatherings, symbolizing togetherness and cultural heritage. Today, variations exist with different meats or even vegan adaptations, showcasing its versatility and enduring popularity.

beef broth

Vegetable broth is lighter and can be made easily.
Sear the oxtail on all edges to create a caramelized layer.
Remove the seared oxtail and add chopped vegetables (onion, aubergine, garlic, celery, carrots, bok choy) to the pot to soften in the meat juices.
Add the oxtail back into the pot with the softened vegetables.
Fill the pot with water and let it simmer for 3 to 5 hours.
Skim off the fat that accumulates on top of the broth.
Extract the oxtail from the broth and set aside.
Make the shrimp paste sauce by browning the shrimp paste until fragrant.
Combine peanut butter, rice flour, and achuette powder paste with some broth, then add the oxtail back in and let it simmer.
Add fish sauce, aubergine, long beans, and banana blossom to the pot.
