Almond milk is lower in calories.

In a large bowl, mix the water, sweet potato puree and cinnamon.

Add the pancake mix and stir to combine batter. It should be lumpy.

Coat griddle or nonstick pan with cooking spray and sit it over medium-high heat.

When pan is hot, add the oil and spoon the batter onto the griddle or pan, using ¼ cup of batter for each pancake.

Cook until bubbles form on the top of the pancake, 2-3 minutes.

Then use a spatula to flip the pancake and cook until golden brown on each side.

Serve with maple syrup or powdered sugar if desired.
