Poke holes in 2 sweet potatoes and roast at 400° for about an hour and 15 minutes.

Remove the skin from the cooked sweet potatoes and place them into a large bowl.

Mash the sweet potatoes with a fork or potato masher.

Measure out 1 and 1/2 cups of mashed sweet potato.
