Batata Wafers

4 cups water
1 small piece of alum
1/2 kg big potatoes
2 tsp salt
oil for frying
red chili powder (optional)

Take 4 cups water in a pan.

Add a small piece of alum to the water and stir it in, then keep aside.

Wash 1/2 kg big potatoes under running water and peel them.

Use a slicer to make even, round slices of the potatoes, keeping them a little thick.

Drop the potato slices directly into the alum water.

Drain the water and add fresh water to the potato slices, ensuring they float.

Add another small piece of alum, cover, and keep overnight, or rest for at least 1 hour if in a hurry.

After soaking, drain the water from the potato slices.

Heat 4 cups of water in a pan and add 2 tsp salt, mixing well.

Add the potato slices to the boiling water, cooking in batches if necessary.

Boil the slices until their color changes from white to yellowish, about 7-8 minutes.

Check if the potatoes are cooked by inserting a fork; if it passes easily, they are done.

Drain the water using a strainer and let the slices sit for about 5 minutes to remove excess water.

Transfer the slices onto a cotton cloth in a line for drying.

Place the cloth under hot sun for sundrying, flipping the slices after half a day.

Dry the slices for 1 to 1.5 days until completely dried.

Fry the dried potato slices in hot oil until they puff up.

Optionally, sprinkle red chili powder on the fried wafers.
