Start by heating coconut oil in a grai over medium heat.

Add washed chicken to the masala; increase heat to medium and cook uncovered for 5 minutes.

Add chunky green chilies and one cup of boiled kettle water; mix and cover, then reduce heat to low and cook for 10 minutes.

After 10 minutes, check that the oil has separated and the masala has thickened; adjust water for desired consistency.

Stir in homemade garam masala and crushed dried fenugreek; mix well.
