1 tbsp neutral oil

1 large onion
1 carrot
1 bell pepper
1 tbsp oyster sauce
1/2 tsp dark soy sauce
1 tbsp sugar
1 tsp chicken bouillon powder
5 tbsp water
1 tsp toasted sesame oil

Cut 500 g of beef into thin slices.

Marinate beef with 1 tbsp soy sauce, 1 tbsp mirin, 1/4 tsp white pepper, 1 tbsp corn starch, 1/2 tsp baking soda, and 1 tbsp neutral oil; massage and let sit in the fridge.

Chop 3 cloves of garlic finely.

Grate about 2 tsp of ginger.

Slice 3-4 green onions, separating the green and white parts.

Slice 1 large onion about an inch thick and separate the rings.

Slice 1 carrot and 1 bell pepper (optional) for added color.

In a small container, mix 1 tbsp soy sauce, 2 tbsp oyster sauce, 1/2 tsp dark soy sauce, 1 tbsp sugar, 1 tbsp mirin, 1 tsp chicken bouillon powder, 5 tbsp water, and 1 tbsp corn starch to make the sauce.

Heat 1 tbsp oil in a wok over high heat.

Add marinated beef and sear for about 1 minute without stirring, then flip and cook for another 1-2 minutes until browned but not fully cooked; remove from the pan.

In the same pan, heat 1 tbsp oil and add sliced onions; let them sit for 1-2 minutes until charred on the edges.

Add garlic, ginger, and white parts of green onions; stir for about 30 seconds until fragrant.

Add carrots and bell pepper; stir-fry for about 1 minute.

Return the beef to the pan, add the sauce, and stir until thickened and everything is coated.

Turn off the heat and add 1 tsp toasted sesame oil and the green parts of green onions; mix well.

Serve the stir fry over rice.
